Soak rice and dal together for 10 minutes.
Add oil in a pressure cooker on a medium flame.To it add all the vegetables and tomato and saute well.
To it add Turmeric Powder and Sambhar powder and mix well.
Lastly add soaked rice and dal and saute a minute.Add 4 cups of water and salt to taste and pressure cook for 15 minutes.
Rice and vegetables had to be cooked mushy. when the stem subsides add tamarind water and stir continuously for few minutes or raw smell disappear.
For tempering,add ghee in a pan on a medium flame.To it add mustard seeds,cumin , asafoetida and curry leaves.
Add tempered mixture to the rice dal mixture and gently mix. Garnish it with coriander leaves.
Tur Dal and Vegetable Rice is ready to serve.
